I love holiday baking! I bake year round, but these recipes are set aside for the holidays/winter months, so they feel all the more special when we get to have them! I usually make 3-4 batches of each recipe and it lasts us the month
of December. That's including giving some to guests, our neighbours, and
the kid's school friends. And please, we eat WAY TOO MANY every day and
night, too! Happy baking!
BUTTERSCOTCH SQUARES
So simple and so dangerous. Melt and mix 1 cup butter + 1 cup peanut butter + 1 bag of butterscotch chips. Pour into a pan and top with mini marshmallows. Let cool/solidify in the fridge or freezer, then cut into squares. It's all health over here, guys!
CLASSIC SUGAR COOKIES
We make these all winter long! Really easy, and so fun for the kids to make into different shapes. Sometimes I'll half the sugar and make them with whole wheat flour or a blend of both, but at Christmas, it's full sugar, white flour, and all the good stuff. JOY TO THE WORLD, no?
Cream together 1 cup of butter, 1 cup of sugar, and 1 egg. Then add 1.5 tsp vanilla extract and .5 tsp of almond extract. The secret is in the almond extract!! Add 1.5 tsp baking soda, 3 cups flour, and a pinch of salt. Mix everything together, roll out, and use cookie cutters. We have a mitten and Oli has started calling these mitten cookies!! haha!!
Bake @ 350 for 8 minutes.
EARL GREY THUMB PRINT COOKIES
Last winter I made these inspired by my friend Vanessa, who is a baker extraordinaire!
Mix 1 cup butter + 2/3 cups sugar + 1 egg + 1 tsp vanilla. Then add 2.5 cups flour + 1 tb earl grey tea (I use DAVIDsTEA's Cream of Earl Grey which also has vanilla flavoring and nice long leaves) + pinch of salt. Form into small balls, then use the end of a wooden spoon to put little holes in the middle of each ball. This will be for your jam after they're baked!
Bake @ 350 for 13-15 minutes.
When cooled, add raspberry jam in your little holes. I started using a squirt bottle from Dollarama and it was life changing! So fast, easy, and no mess.
