I make pizza at least once a week. Normally I use my home-made dough, but once and a while I'll go with tortillas. Fun tpo change it up and they bring a different texture to it, being crunchier.
Start with tortillas, which I make constantly and love. I got the recipe from Jami Nato's blog but I changed a couple things.
1.5 C whole wheat flour
1.5 C all-purpose flour
pinch of salt
1/4 C olive oil
1/2 C hot water
Whisk the dry ingredients, then add to the combined wet ingredients. Mold into a ball, then divide into 12 smaller balls. Roll out each ball on a floured surface and then cook in the frying pan, as you would pancakes. You know, wait for bubbles to appear on the surface, then flip.
Once you have your tortillas, you can do endless things! But let's stick with pizzas. Dream small.
Unlike making regular pizzas, I cook the meat toppings before adding them to tortilla pizzas (because you only cook them in the oven for a few minutes opposed to 10-20).
Top your tortillas however you'd like. I use olive oil in place of red sauce, because the flavour of the tortillas is not to be masked. Grated cheese, cooked ground meat works great, random veggies and herbs. Then cook in the oven at 425 for around 5 minutes, just enough to melt the cheese and crisp up the tortillas (which should be soft at the outset).
