I had no idea what to call this salad, since every ingredient seems as crucial as the next. There aren't really more chickpeas or beans than avocados or cumin... everyone plays an important role here. But every recipe needs a title, and they were the most substantial in terms of nutrition (Protein? I don't know, it makes sense in my head) so I went with it.
I made this the other night in an effort to empty my fridge. It was so delicious and my kids ate it up rapidly, which is always encouraging when it's a healthy meal they actually like! Here's what I threw together (portions can vary)
1 cup chikpeas
1 cup black beans
1 avocado, cubed
1 small red pepper, cubed
1 bunch green onion, sliced
parsley
cilantro
handful of black chia seeds
handful of sesame seeds
salt (to taste)
pepper (to taste)
olive oil + lemon juice (equal parts)
few shakes of cumin (to taste)
few shakes of coriander (to taste)
Toss all together in a bowl, eat and be merry :)
